I've been looking at old images from Canon. The way I did it back then, mostly to save space, was to record RAW (CR2) only with embedded full size in-camera JPG. If I want the embedded JPG, it can be extracted from RAW (e.g. with EXIFTool).
If I open the CR2 in PWP8, it seems to do the RAW conversion, which is great. Is there a way of extracting the embedded JPG instead within the PWP?

No, there is no way to extract the embedded JPEG or thumbnail.
